Manchester! Get ready to welcome Vapiano to our city’s growing Italian dining scene. In a break from the current norm, Vapiano has shunned what is being affectionately called the Italian Quarter in favour of the eagerly awaited foodie destination of the Corn Exchange. So what will this new Italian restaurant bring to the new development? Restaurants of Manchester was lucky enough to be invited down to London for a sneak preview of not one but three of the chain’s restaurants.

Our Vapiano adventure started at the bright, airy and modern looking Bankside restaurant. The right look isn’t the only modern thing about Vapiano. As you enter the venue you’re greeted by a friendly lady who explained the Vapiano concept and handed us our card which is to be used for ordering and payment on the visit.

The concept is simple yet effective; receive a swipe card as you enter the restaurant and find a seat. Once seated, look over the menu and make your choices, but rather than waiting for a waitress to come to you, just head over to the live cooking stations where the knowledgeable and friendly chefs are waiting to not only take your order, but to prepare dishes before your eyes. This unique style of ordering allows you to personalise dishes to you exact tastes. No salt, more chili, hold the olives? Not a problem, just let the chef know. Once you finish you meal just take you card to the till were you make payment just for what is on you card.

Now as we would be visiting 3 restaurants in one day rather than having 3 meals, we had a single course in each. At the Bankside restaurant we sampled a selection of starters; the Carpaccio and the Piatto Antipasti, along with the Strawberry & Spinach salad, and also the Insalata Reef'n Beef.

The antipasti platter consisted of a selection of sliced Italian meats, Grana Padano D.O.P and roasted vegetables accompanied by the in-house bread which has been lightly toasted and topped with delicately seasoned tomatoes, creating a flavourful bruschetta. Creamy buffalo mozzarella paired with homemade basil pesto finished of this platter perfectly, and for £10 it’s an amazing example of the fresh produce which Vapiano prides itself of using.

The stand out dish at Bankside for me was the one we had the most reservations about when looking at the menu. The strawberry and spinach salad before this trip would have been the one that we didn’t order, with expectations that the spinach would overpower everything else on the dish. How wrong were we? This salad was an absolute delight and one we’ll be sure to be ordering in the Manchester branch. A perfect combination of toasted pine nuts, sweet strawberries, fresh baby spinach leaves, red onion and soft goat’s cheese, all dressed in Vapiano’s secret homemade raspberry maple dressing. It simply created an explosion of flavours that left you wanting more.

A quick taxi ride across London and we reached our second dining destination in Soho, the branch which most accurately represents what we will be getting in the Corn Exchange. This restaurant has a slightly more intimate and rustic feeling than Bankside, but the concept remains exactly the same. After a look at the menu it was off to the chef stations, at which point whilst on the pasta station we learned that they are capable of making upwards of 30 dishes an hour, working 2 pans at a time. We were in awe of this feat.

11 varieties of pasta, including 2 made with spelt are on offer, along with the option to customize you sauce with extra garlic, chili or maybe double meat, so you have endless possibilities to create your perfect dish.

Everyone has their favorites when it comes to pasta sauces and for me it’s Pesto every time. After the delicious Pesto on the platter at Bankside we couldn’t wait to have this on freshly made pasta, so ordered the Scampi E Spinaci, which also happens to be one of the best sellers! This dish was everything we expected and more. A l dente cooked pasta with succulent king prawns, a splash of cream combined with the fresh and fragrant Basil pesto, creating a rich yet flavourful sauce. The added crunch of spinach created a dish which was both rich and delicate at the same time, creating a true winner and one we are sure that Manchester will love.

If you prefer a little spice with your pasta then the Salsiccia Con Ficci will be one for you. Spicy Italian sausage, fresh figs and tomato sauce create a meaty piquant dish, finished off with creamy cheese to cool the palate.

Pizza and Calzone are also popular choices on the menu although take a little longer to cook (8 minutes). Due to the longer cooking time, the chef gives you a buzzer which will notify you once your pizza has been cooked to perfection, allowing you to return to you table with your dining companions in the meantime.

We sampled the Calzone, and even though this is a folded pizza the dough remained light and crispy, which allowed the ham, spicy Italian sausage, mushrooms, mixed herbs, onions, tomato sauce to shine and retain their individual flavours.

After a thoroughly enjoyable main course we headed on a short walk to our third and final course and destination on Great Portland Street. By now it was mid afternoon and just like the previous 2 venues this one was also busy.

At Great Portland Street we got to sample the home and handmade Vapiano Dolci. Most of these delicious dishes come is 2 sizes, making the hard decision of choosing what to have for dessert a little bit easier, by having more than one. We sampled a selection including the Panna Cotta, Tirimisu Della Casa, Blueberry Cheesecake and Baked Cheesecake. We honestly have to say that we couldn’t pick a favourite dessert, and each was as delicious as the next.

After spending a day seeing and sampling all that Vapiano has to offer, we can see the concept of fresh, fast food, available to eat in or take away, being just as successful in Manchester as it has already become in London.
