We can exclusively reveal that the pending opening of Franco Manca Manchester, will be located at Cobden House on the corner of Mosley Street and Piccadilly Gardens, formerly home to Lloyds Bank.
With pizza made on site, daily, from 20 hour slow-rising sourdough in a wood burning "Tufae" brick oven, which are installed by specialised artisans from Naples, to produce a heat of about 500°c (930°F) - the slow-quick process means the flavour, aroma and moisture cannot escape.
Seasonal ingredients are sourced from small suppliers across Italy and the UK and 50% of their employees are said to own shares in the company.
With over 36 branches in
London alone, a further nine down South and and one in Italy, it will be interesting to see if
Franco Manca's first steps up North and into Manchester's thriving Neapolitan
pizza scene prove to be sweet or, as many
London operators have found, somewhat sour.
